In a large pot, add broth, kaffir lime leaves, lemon grass, ginger and zest of lime and half the lime juice and bring to the boil. Then reduce heat to infuse flavours for around 8-10min.
Add chicken. If using raw chicken, bring back to the boil then reduce heat again for approx 10min.
Add the coconut cream, fish sauce and sugar and bring back to a simmer. Then add the chilli, carrots, zucchini and capsicum and cook for another 5min until cooked. (total cook time approx 20-25min.
In the meantime, cook the Rice vermicelli noodles as per packet instructions, drain and set aside once cooked.
Once everything is ready, divide some of the noodles into your serving bowls, scoop over your soup ensure you get a mix of everything and lots of the soup! Then top with spring onions, nuts, and fresh coriander and fresh lime juice.
