Nourishing Thai Chicken Coconut Soup

Enjoy this nourishing and delicious take on the traditional Tom Kha Gai. A warming soup with all the goodness, just the right amount of creaminess and a hint of spice. Make a big batch and save some in the freezer for a rainy day!

Ingredients
  

  • 3cm Fresh Ginger, Peeled chopped small
  • 1 tsp Jar lemongrass (or fresh!)
  • 1 tsp Jar Kaffir Lime Leaves (or fresh!)
  • 1 Zest of lime and the juice
  • 6 cups Chicken or vegetable broth homemade even better!
  • 500g (approx) Chicken thigh, breast cut into small pieces or left over roast chicken shredded.
  • 2 Carrots, peeled and into 'noodles' with julienne peeler.
  • 1 Zucchini, into 'noodles' with julienne peeler.
  • 1/4 large Red Capsicum, sliced into thin strips similar to the carrots/zucchini.
  • 1 can Coconut cream if you only have coconut milk that's fine too!
  • 2 tbsp Fish sauce or tamari/ coconut aminos
  • 1 tsp Raw Sugar
  • 1 small Fresh chilli, thinly sliced (or dried flakes if you don't have fresh)
  • 100g Rice vermicelli noodles
  • 1 Spring Onion, sliced
  • 1 small handful Cashews OR peanuts, chopped
  • 1 handful Fresh Coriander leaves

Instructions
 

  • In a large pot, add broth, kaffir lime leaves, lemon grass, ginger and zest of lime and half the lime juice and bring to the boil. Then reduce heat to infuse flavours for around 8-10min.
  • Add chicken. If using raw chicken, bring back to the boil then reduce heat again for approx 10min.
  • Add the coconut cream, fish sauce and sugar and bring back to a simmer. Then add the chilli, carrots, zucchini and capsicum and cook for another 5min until cooked. (total cook time approx 20-25min.
  • In the meantime, cook the Rice vermicelli noodles as per packet instructions, drain and set aside once cooked.
  • Once everything is ready, divide some of the noodles into your serving bowls, scoop over your soup ensure you get a mix of everything and lots of the soup! Then top with spring onions, nuts, and fresh coriander and fresh lime juice.
